Why is better to buy the whole chicken?
In my experience it just makes so much more sense to buy the whole chicken versus the parts. It’s about eating whole foods right? And is also about getting more for your bucks.
With a whole chicken I make 3 dishes and feed a family of 3 for a week with the help of some side dishes and salads. Needless to say it is far more economic than buying pre cut parts. Let’s see how:
- Legs, wings, liver and heart are going into the slow cooker or a roasting pan with spices (Celtic sea salt, pepper, hot or sweet paprika), lots of garlic and a little bit of water. I prefer using the slow cooker as I don’t need to worry about having to be home to make sure I don’t burn the kitchen down.
- The rest of the chicken (neck, back, the bone breast, sometimes the breast too-if I don’t make filet for grilling), along with some feet which I purchase separate, will go into an 8 quart soup making pan, with cold water, Celtic sea salt and whole peppercorns. I boil it for about 3-4 hours at very low heat (simmer it), and then I add a lot of peeled whole carrots, celery root, parsley root and onion. I continue to simmer it for another 2 hours, after which I strain the beautiful gold like chicken stock, which I use later as a base for a vegetable soup with shredded chicken meat which falls off the back and neck of the chicken.
- All the meat that comes off the bones, and the vegetables from the soup I will chop and use to make a delicious Romanian Chicken Salad using homemade mayonnaise (with fresh from the farm eggs and extra virgin first cold press olive oil) and homemade sauerkraut. Yumy…
- The bonus meal are the feet, my son and I enjoy eating, they are not only delicious but they provide us with the most healing elements of the bone and cartilages, real food as medicine for the human gut.
- If I decide to fillet the breast then I have another main dish-grilled or seared chicken breast.
That gives us 4 not 3 main dishes and if we count the chicken feet that makes it 5. Who can beat this, 5 dishes for about $25 for 1 week minimum.
